At Ellopia, we take the crucial role of the olive grove seriously, in the production and quality of olive oil.
That’s why we always start from the field.

Our agronomist collaborates with selected producers, providing support and advice on cultivation and using technology that records the entire process, including the necessary time for harvesting and ensuring high-quality standards.

Despite olives being harvestable at any point during ripening, we insist on early harvesting around mid-October, which is considered to be the ideal time for oil with distinct characteristics and high levels of polyphenols and antioxidants,

Once harvested, our state-of-the-art equipment is employed for the cold oil extraction method,
followed by storage and the final stage of standardization.

To meet the high-quality standards of Ellopia olive oil, NIMO company underwent a complete renovation of...
its operational facilities spanning
9,250 sq.m.

1,200 sq.m. building
It includes an olive press processing
10,000 kg/hour of olives
and an automated standardization unit filling approximately
700 containers/hour

The building is also equipped with airtight inox tanks storing the produced olive oil at a controlled temperature and keeping it away from light. It has a nitrogen production installation used during storage and standardization, providing ideal conditions and the appropriate environment for Ellopia olive oil, maintaining its high quality and nutritional value from the moment it leaves the olive press until the last drop!

Quality control is one of the most important processes for the company, as it is an intrinsic part of company’s philosophy.

We are committed to the production of high-quality olive oil, establishing the maximum safety and trust of our consumers as our absolute priority.

For this purpose, we implement a Management and Quality Assurance system. This system focuses on continuous quality review and high standards maintenance in all stages of production, from the selection of raw materials to the final product.

Through this system, we ensure that best practices are applied and strict safety, hygiene and quality standards are met during the production, storage and handling of our product, which bears the name Ellopia.
