Despite olives being harvestable at any point during ripening, we insist on early harvesting around mid-October, which is considered to be the ideal time for oil with distinct characteristics and high levels of polyphenols and antioxidants,
Once harvested, our state-of-the-art equipment is employed for the cold oil extraction method,
followed by storage and the final stage of standardization.
